Chia seeds in liquid take on a gelatinous texture perfect for puddings, as in these parfaits. (Chia is high in antioxidants and high in fiber too.) Serve in tall glasses to show off the layers. The teas that would be great in this recipe would be Chamomile Vanilla, Lemon, Vanilla Pau d'Arco, Toasted Almond Herbal, Blue Sky Green, and Chai Green.
Tea Chia Pudding
1 tea bag or 2 teaspoons loose tea
1 cup milk any type
1 cup yogurt any type
6 t. maple syrup
3 T. chia seeds
Parfaits
1 ripe peach or 1 c. mango thawed if frozen
1/4 c. fresh raspberries, strawberries or blueberries mashed
Makes 4 servings
To make the parfaits place tea and milk in a small saucepan over low heat to 175 degrees F.
Remove from heat and steep until cool.
Remove tea bag or strain tea from the milk.
Whisk yogurt into the tea milk. Stir in maple syrup and chia seeds. Chia seeds tend to clump so whisk until separate and immersed. Cover and refrigerate 5 hours or overnight until custardy.
To assemble layer in order 1 T. peach or mango, 1/2 c. chia pudding, 1 T. raspberries, strawberries or blueberries.
