I have been having lots of fun adventures making herbal honey recipes. They need to rest for 2 weeks with once a day stirring before using but I needed a boost after putting my garden to sleep for the upcoming Winter.
The first herbal honey recipe I worked on was Chai honey. It has been very rewarding, and I am sure it will be a staple for me. The chai spices were tricky to get in correct balance. I called upon my daughter who is a trained chef and her palate helped me get the balance just right. This honey is a champion pick me up in the afternoon. 1 tablespoon to 3/4 cup hot water and 1/4 cup milk of choice. Mix well.
The next honey I tried is Curry honey. It is wonderful over chicken before baking, roasted vegetables and on rice!
Since Thanksgiving is coming up, I made a honey with crystallized ginger, finely chopped cranberries, thin sliced orange peel and powdered rose hips. Yummy on crackers with cheese.
My attention next was to a honey to help colds and soothe sore throats. (honey should not be given to children under the age of two) I mixed fennel seed, juniper berry, ginger, horseradish and garlic.

I also made a heart tonic honey. This recipe is a tonic for our cardiovascular system. I used powdered hawthorn berry, rose hips, cinnamon and ginger.
