I love watermelon. I have fond memories of my uncle Bill standing outside eating watermelon and the juice running down his face and he just kept on eating it spitting out the seeds on the ground. It was so cool. He had such a good time.
Steep 6 bags green or black tea in 6 cups hot water for 5-10 minutes depending upon how you like it. Remove bags and let cool and refrigerate covered for at least 1 hour.
Slice off rind of one small seedless watermelon and slice into cubes and place into a blender and process.
Using a spoon against a strainer press out juice. Cover and refrigerate.
Combine 1/2 c. sugar and 1/2 c. water and simmer until sugar is dissolved. You could use honey instead. Add 1/2 c. basil muddled or crushed. Cover and Refrigerate when cool.
Pour 3 cups of watermelon juice into chilled tea and add basil syrup to taste.
Add juice from 3 limes and stir.
Serve over ice and garnish with several basil leaves.
Serves 7-8 and keeps in refrigerator for 4 days. Stir before serving. Maybe for Uncle Bill just one serving!
