Rooibos Fruit Kanten


The vegetarian algae thickener known as agar agar also goes by the name kanten. Either way, it works like gelatin. Make this sweet in glass ramekins or juice glasses to show off the colors and enjoy!


Makes 6 servings.

18 raspberries

6 strawberries, hulled and chopped

12 cherries, stemmed, pitted and quartered when in season or 18 blueberries

3 cups rooibos tea brewed 10 minutes with 8 bags or 1/4 c. loose. Try Healing House Herbs Ginger Apple Rooibos, Peach, Lemon or Hawaiian Rooibos.

1/4 c. sugar

1 t. vanilla

1/2 t. fresh lemon juice

3 T. agar agar


Set out 6 six-ounce glasses. Place the following into each: 3 raspberries, one chopped strawberry, and two quartered cherries or 3 blueberries. Stir the rooibos, sugar, vanilla, lemon juice, and agar agar in a 2-quart saucepan. Bring to a boil over high and then lower the heat to simmer 5 minutes. Stir occasionally making sure nothing sticks to the bottom. Turn off the heat. Carefully ladle 1/4 c into each glass. Stir in any fruit that bobs to the top. Cover and refrigerate 2 hours or until cold and solid.


Switch up the fruit to your choice and experiment. Enjoy!
