Vivid green soup to help drive any doldrums away.
1 T. Extra virgin olive oil
1 medium onion, chopped (1 1/2 c.)
4 cups Mint tea brewed. Healing House Herbs Sipping Mint and Rosemary Mint Green Tea are wonderful. (brew 8 bags or 1/4 c. loose tea in 4 cups of just boiled water)
1 1/2 teaspoon salt
3 1/2 c. frozen peas or fresh peas
1/4 t. lemon zest
1 c. spinach leaves
1 small clove garlic minced (1/4 t.)
1/8 t. freshly ground pepper
dash red pepper flakes
Makes 6-8 servings.
In an 8-quart stockpot over medium heat add oil and swirl to coat the bottom of the pot. Sauté the onion for 5 minutes, stir occasionally. Pour in the tea, and stir in salt, peas, lemon zest and spinach. Turn up the heat and cook for 5 minutes until pot is softly boiling and peas are cooked through. Stir in minced garlic. Cool for 5 minutes. Pulse in batches until smooth. Adjust seasonings adding pepper and more salt if needed.
