Fruit Tea Fresca


This recipe is when you feel like having a party even for just one!


4-6 servings

1/2 c sugar or ** 1/4 c agave and reduce water to 1/4 c.

1/2 c water

2 pounds of fresh fruit such as (when in season) watermelon, canteloupe, muskmelon, berries or any mixture you choose. Peel and chop the melons and remove seeds.

2 1/4 c brewed tea cooled. (8 bags or 1/4 c. loose tea)

Good choices would be blueberry breeze, chamomile vanilla, ginger strawberry, hibiscus berry, lemon, lemongrass, mango, orange bliss, peaches, peach hibiscus, sipping mint, vanilla pau d'arco, Hawaiian rooibos, ginger apple rooibos, golden apple green, cherry rose green, ginger tumeric wellness, pineapple green, pomegranate rosehip black, blood orange, black.

1 c. water


To make simple syrup

Pour 1/2 c. water and sugar into a 2-quart saucepan and set over medium high heat for 3-4 minutes or until sugar dissolves. Stir. Turn off the heat. Cool. ** (if using agave use 1/4 c agave and 1/4 c water on medium low to bring together. Remove from heat and cool.)

To make the fresca

Puree the fruits in a blender until smooth. Strain through a sieve. Press solids to extract all the juice. Stir together the juice, tea, simple syrup or agave and 1 c water. Serve over ice.
