The flavor and health benefits of Elderflower are amazing. Elderflower clears the upper respiratory tract and aids with allergies. It has a long history of help with colds, coughs, and flu. Elderflower tea is used as a skin tonic. We usually have elderflowers growing on our property, but the winter was so dry I am unsure if they are alive. I hope to make this soon.
Makes 10 pints or 5 liters
3 1/2 c sugar
2 cups hot water
4 large elderflower heads
2 T. white wine vinegar
juice and rind of 1 lemon
4 liters water or 8 1/2 pints of water.
Mix sugar with hot water. Pour the mix into a large glass container. Add remaining ingredients. Stir well, cover and leave for 5 days in a cool place not in the sun.
Strain off liquid into sterilized glass jars. Put parchment in between the canning lid and the liquid when you seal the glass jar. (or use plastic screw top lids instead) Leave for 1 more week. Refrigerate. Serve cold with slivers of lemon rind.
