I want a chai latte now!!!
This recipe is a convenient way to have chai ready to go when you want a caffeinated tea latte.
The recipe is meant to be diluted with water or milk before serving and not meant as a drink on its own. Use 1:1 ratio of concentrate to water or milk, or equal parts of each and adjust to taste.
To make an iced chai latte with concentrate pour the concentrate directly over ice (you can even use chai ice cubes already frozen) and then add milk too.
To make a hot chai latte with concentrate, heat the concentrate first. Add to a mug and then top with frothed or steamed milk.
Chai Concentrate
4 cups water
4 teaspoons black tea loose leaf or 4 tea bags
1 inch knob of ginger
1/2 teaspoon nutmeg
2 cinnamon sticks
8 cardamom pods
6 black peppercorns
6 cloves
1 whole star anise
4 tablespoons sweetener
Grind spices briefly or lightly crush in a mortar pestle or with back of a knife or wooden spoon on a cutting board.
In a saucepan on medium heat add crushed spices and toast 1 minute.
Add water to the saucepan with spices and bring to a boil. Reduce heat and simmer for 20 minutes or so depending upon how spicy you want the concentrate.
Bring water and spices briefly to a boil again and remove from heat. Add black tea and steep for 5 minutes.
If you want to sweeten the concentrate, stir in sweetener now.
Pour through a strainer into a glass container and let cool to room temperature before sealing and refrigerating. Store in the fridge for 1 week.
