
Butterfly pea flower common in Thailand and Malaysia produces a vibrant blue color to a liquid. The color comes from anthocyanins which are a group of bioactive pigment naturally occurring in some plants. When this magic hits an acidic base like lemon or lime the color changes to purple.
The natural coloring contains an antioxidant rich compound that can provide health benefits like anti-aging, enhanced memory and brain function. It also has anti-inflammatory properties.
A wonderful drink using butterfly pea flower:
2 teaspoons butterfly pea flower
1/2 c hot water
1 Tablespoon sweeter of choice
1 teaspoon vanilla extract
1/4 cup milk of choice
Place in infuser the butterfly pea flower or use a tea bag and steep in just boiled water for 5 minutes. Remove, straining pea flower.
Stir vanilla and sweetener of choice in serving mug with the butterfly pea flower tea. Use a glass container, if possible, to admire the color!! Heat and froth milk of choice until almost double and top the mug of tea with the frothed milk. Watch the milk blending. Beautiful!
