Blackberry Cordial

Go out to your blackberry patch (mine has taken over my backyard!) or purchase organic blackberries and make this delicious cordial. Take 1-2 tablespoons a day or save it for over ice cream.

2 cups blackberries

1 knob ginger root grated

1 T cinnamon chips or part of cinnamon stick

2-3 thin slices organic orange


Honey if desired

Gently crush the berries and place in a widemouthed jar with the rest of the ingredients.

Cover with three times as much brandy.

Cap tightly.

Shake daily for several days and then strain. Sweeten slightly with honey if desired.

Let the cordial steep longer. Some cordials can steep a long time in a dark and cool environment.
